  • 1 c steel cut oats
  • 1/2 c dark brown sugar
  • 1 c pure pumpkin purée
  • 2 cups almond milk
  • 1 cup water
  • 1/2 t cinnamon
  • 1/4 t salt
  • 1 t vanilla extract
  • 2 T butter melted
Suggested Toppings
  • dried cranberries

  • granola
  • whipped cream
  • nutmeg
  • cloves
  • berries
  • figs
  • cinnamon
  • pepitas
For Pressure Cooker
  1. Add oats, pumpkin, brown sugar, butter, almond milk, cinnamon, salt, and vanilla to pressure cooker. Stir to combine.

  2. Set to manual high pressure for 8 minutes.

  3. Use a quick release to release the pressure.

  4. Garnish as desired.

For Slow Cooker
  1. Mix all ingredients together in a bowl.
  2. Spray inside of crockpot with cooking spray.
  3. Pour mixture in crockpot, cover. Set on timer for 7 hours on low.
  4. In morning, stir well and top with desired garnishes.

For Slow Cooker Method:

If you have an oven-proof bowl that fits in your crockpot, a water bath is a great method to use to prevent any burned edges if you end up sleeping in. Simply place the bowl in your crockpot, fill the crockpot (outside of the bowl) about halfway with water, and pour your ingredients into the dry bowl. It cooks the food a little more gently.
