FRESH FRUIT CAKE FILLING

▢4 cups fresh seasonal fruit of your choice ▢1 cup water ▢½ cup sugar ▢4 Tablespoons corn starch ▢2 Tablespoon lemon juice

INGREDIENTS

Cut fruit into small pieces. If using a fruit with a thick skin, like peaches, you may want to peel first.

STEP 1

In a sauce pan add fruit, water, sugar, corn starch and lemon juice. Bring to a boil and stir.

STEP 2

Stirring constantly reduce heat and allow to cook until filling is thickened.

STEP 3

Makes about 3 cups prepared fruit filling.

STEP 4

Use this in a white cake, on crepes or in a trifle! The possibilities are endless.
