Apple Gorgonzola  Salad

A copycat of the famous Bucca Di Beppo salad - crisp greens, green apples, walnuts, and gorgonzola with a mustard vinaigrette.

Ingredients Salad – 2 romaine lettuce hearts – 1 cup crumbled Gorgonzola cheese – 1 cup dried cranberries – 2 green apples – ½ red onion  – 1 cup candied pecans – mustard vinaigrette  Mustard Vinaigrette – 1 clove garlic – ¼ red onion – 2 teaspoons Dijon mustard – 1 teaspoon oregano – ⅓ cup apple cider vinegar – ½ cup olive oil

Step 1: Make the dressing. Place all the ingredients in a blender and blend until it’s smooth. Set it aside while you make the salad.

Step 2: Prep all your ingredients for the salad. Start by cutting the romaine lettuce into bite-sized pieces.

Step 3: Dice up the green apple into small diced cubes.

Step 4: Slice the red onion into rings.

Step 5: Arrange the lettuce, cheese, diced apple, walnuts, and cranberries in a bowl.

Step 6: Drizzle with the desired amount of mustard vinaigrette. Toss to coat.
