Artichoke Spinach Stuffed Mushrooms

Tender mushrooms stuffed with creamy cream cheese, marinated artichokes, fresh spinach and sun dried tomatoes are the ultimate party appetizer.  These Artichoke Spinach Stuffed Mushrooms will be a hit at your next get together.

Ingredients

Filling

  • 2 ounces cream cheese softened
  • cup mayonnaise
  • ½ tablespoon lemon juice
  • ½ cup mozarella cheese
  • cup sundried tomatoes
  • 7 ounces marinated artichoke hearts chopped
  • ½ cup Earthbound Farm Organic Baby Spinach
  • salt and pepper

Mushrooms

  • 24 fresh whole mushrooms white or cremini
  • fresh grated parmesan cheese

Instructions

The Filling

  • Add softened cream cheese to a large mixing bowl.  White until soft (about 30 seconds).
  • Pour in mayonnaise and mix.
  • Squeeze in lemon juice.
  • Toss in grated mozzarella cheese.
  • Add sun-dried tomatoes.
  • Chop your artichoke hearts and add them to the mixing bowl.
  • Add Earthbound Farm Organic Baby Spinach to the mixing bowl.
  • Using the paddle attachment of your stand mixer, mix until well combined.
  • Season to taste with salt and pepper.
  • Mix one last time to incorporate your seasonings.

The Mushrooms

  • Prepare your cleaned mushrooms but snapping off the stems of the mushrooms.
  • Set onto a cutting board or baking sheet.
  • Using a teaspoon, fill each mushroom cap with filling.
  • Sprinkle with parmesan cheese.
  • Transfer to a baking dish or baking sheet.  Bake at 350 for 20 minutes until mushroom caps are softened and liquid forms in the bottom of your baking dish.

Notes

How do you clean mushrooms?
The best way to clean mushrooms is to wipe them with a damp cloth.  Mushrooms act as sponges, so rinsing them is not advised.
What kind of mushrooms should I use?
Use large, whole mushrooms.  I prefer to use white or cremini mushrooms. But any fresh, whole, edible mushroom will work.
How long do stuffed mushrooms last in the fridge?
The will keep in an airtight container for 3-5 days.
Can you make stuffed mushrooms ahead?
Yes! You can assemble the artichoke spinach stuffed mushrooms a day or two before, then cover and refrigerate. Bake about 30 minutes before serving time.
Can you freeze artichoke spinach stuffed mushrooms?
Yes, but only prior to baking.  After you have assembled your mushrooms, place them on a baking sheet and freeze for about 2-3 hours.  Transfer them to a freezer bag and freeze for up to 3 months.  To cook the frozen stuffed mushrooms, you don’t need to thaw them. Simply bake the frozen stuffed mushrooms in a preheated oven for about 30-35 minutes.
Can you reheat stuffed mushrooms?
Cook in a preheated oven (325 degrees F) uncovered for about 15 minutes until heated thru.
