- 1 large parsnip diced
- 2 large carrots diced
- 1 large sweet potato diced
- 3 tablespoon olive oil
- 1 teaspoon sea salt
- ½ teaspoon black pepper

Toss all ingredients together.
Place in a 9x13 baking dish or on a baking sheet.
