HAM AND POTATO SOUP

▢4-5 Red Potatoes cubed ▢1 bunch green onions Diced ▢3 carrots diced ▢5 celery stalks Sliced ▢3 cups water ▢1 ½ cups ham steak diced ▢3 cups milk ▢8 ounces whipping cream ▢3 tablespoon corn starch ▢6 tablespoon water ▢8 ounces sour cream ▢salt ▢pepper ▢onion powder ▢parsley flakes optional

INGREDIENTS

Combine potatoes, green onions, celery, and carrots in a pressure cooker. Cover with just enough water to cover (About 3 cups). Cook on manual pressure for 2 minutes. Use a quick release to release steam.

STEP 1

Set pot to saute. Add Milk and whipping cream to the cooked veggies. Then add diced ham.

STEP 2

Create a slurry of corn starch and water and add to soup. Stir until thickened.

STEP 3

Season to taste with salt, pepper, onion powder, and parsely.

STEP 4

Add sour cream, stir until melted and enjoy!
