Pressure Cooker
fine strainer
- 1 whole chicken rotisserie or raw
- 1 large onion
- 5 large carrots
- 5 large celery
- 3 garlic cloves
- 1 Tablespoon oregano (2-3 sprigs) or 1 teaspoon dried
- 1 Tablespoon thyme (2-3 sprigs) or 1 teaspoon dried
- 1-2 bay leaves
- 1 Tablespoon sea salt
- water
Bone Broth with Rotisserie Chicken
Remove meat from chicken. Add bones and juices from tray to the pressure cooker.
Rough chop your veggies, garlic. Add all veggies, herbs, garlic and salt to pressure cooker.
Fill water up to max fill line. Cook for 60-90 minutes and then natural release the pressure.
Strain broth and store it.
Bone Broth with Whole Chicken
Remove any extra parts from cavity. Place in pressure cooker.
Rough chop your veggies, garlic. Add all veggies, herbs, garlic and salt to pressure cooker. fill water up to max fill line.
Pressure cook high 60 min natural release. Remove the chicken meat from bones.
To make chicken stock. Strain broth and store. To make chicken bone broth. Add bones back to pressure cooker and cook another 30-60 minutes. Natural release and strain.

Do you not fill up your pressure cooker past the fill line. Your veggies and chicken should be covered or almost covered. It's ok if they're sticking out a bit, everything will cook down.
You don't necessarily need the meat on the chicken to make bone broth. If using a rotisserie chicken, remove all the meat and save it to use in other recipes.
Feel free to vary the seasonings and vegetables if you prefer but remember to avoid cabbage, Brussels, broccoli, and cauliflower because they will make a smelly broth.
