  • sheet pan

  • 3 lbs sweet potatoes peeled and 1 inch cubes
  • ½ cup maple syrup
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 ½ teaspoon salt
  • 5-8 pieces bacon
  • 1 cup pecans chopped

  • Preheat oven to 425. Wash, peel and cube pecans into 1 inch cubes. PLace in a large bowl.
  • Add syrup, chili powder, cumin, salt, bacon, pecans and stir. Spread on a lightly greased sheet pan on a single layer.
  • Place in oven. Cook for about 15 and stir. Continue cooking and stirring every 15 minutes until sweet potatoes are crisp and slightly browned on the edges. totally cook time will be about 20-30 minutes.

  1. Cook at a high heat. I like to cook my sweet potatoes at 425. This allows the sweet potatoes to crisp up. Otherwise they will be soft and mushy.
  2. Stir 1-2 times throughout cooking. This will help your sweet potatoes and bacon to cook through and on all sides but will ALSO help spread the delicious flavors.
  3. Use foil to help with clean up.
After 15-20 minutes YOU MUST stir the sweet potatoes. This will help the bacon grease to coat and crisp the sweet potatoes flavor them.
