Creamy Coconut Lime Popsicles

- 1 ½ cup vanilla greek yogurt
- ¾ cup lime juice
- 2 lime zest
- ½ cup cream of coconut
Juice limes and zest two limes. In blender add vanilla greek yogurt, lime juice, lime zest, and cream of coconut.
Pour in popsicle molds and allow to freeze for 1 hour. After popsicles are starting to firm up add popsicle stick and allow to freeze completely.

Let the popsicles partially freeze before adding the popsicle sticks so they stay straight!
Run popsicle mold under warm water if they're stuck and won't come out.
For more intense flavor, add lime zest to the mixture.
Use cream of coconut for a perfectly balanced coconut lime popsicle.
For a dairy-free option, you can use coconut milk or coconut cream as a yogurt substitute.
Use Toriani coconut syrup as a substitute for the cream of coconut if in a pinch.
Because we don't all have the same popsicle mold it can be tricky to know how much to make in advance. Before making the lime popsicle mixture, pour water into your popsicle molds 1 cup at a time to see how much liquid you need for your popsicles. My mold holds about 4 cups of liquid. Also, If you are adding fresh fruit to your popsicles then you don't need to make as much. If you have extra liquid, serve it to your kids as a drink!
