Teriyaki Chicken Tacos
  • 8 small flour tortillas
  • 2 chicken breasts cooked & shredded or diced *see notes
  • 1/3 cup Cacique® Queso Fresco
  • 1/3 cup Cacique® Crema Mexicana
  • 1/2 cup shredded lettuce
  • 1 1/2 cup teriyaki sauce recipe below
  • 1 cup pineapple salsa recipe below
Teriyaki Sauce
  • 1/4 cup soy sauce
  • 1 cup water
  • 1 teaspoon fresh grated ginger
  • 1 clove garlic minced
  • 2 tablespoons honey
  • 2 tablespoons cornstarch
  • 1/4 cup cold water
Pineapple Salsa
  • 1/2 fresh pineapple diced. (about 2+ cups.)
  • 1/2 red bell pepper
  • 1/2 jalapeño seeded and stemmed
  • 1 mango optional
  • 1 clove garlic
  • 1/2 purple onion
  • juice of one lime
  • 1/2 cup cilantro chopped
  • Salt to taste
Teriyaki Tacos
  1. In a flour tortilla layer chicken, lettuce, pineapple salsa, queso fresco, and crema Mexicana.

Teriyaki Sauce
  1. In a small saucepan combine soy sauce, water, ginger, garlic, and honey. Bring to a simmer.

  2. In a small bowl combine cornstarch and water. Whisk until combined.

  3. Add to sauce pan and whisk until thickened.
  4. Toss with cooked chicken to coat.

Pineapple Salsa
  1. Dice all ingredients (you can use your food processor or blender, depending on how crunchy/minced you like your salsa)
  2. Combine all ingredients in a large bowl. Toss to combine.

  3. Add salt to taste

Options For Cooked Chicken

There are a few options for choosing your cooked chicken. Let me go over a few:

  1. Shred the breast meat from a rotisserie chicken.   love this little cooking tip.  The chicken is so tender and delicious.
  2. Cook chicken breasts in the instant pot and shred. Just use the poultry setting and allow a natural release.
  3. Boil chicken breasts and shred.
  4. Grill chicken and dice.
  5. Use pre-cooked chicken strips.
