Ingredients
Aubrey's Blender Pancakes
  • 1 C milk
  • 1 C flour
  • 1 egg
  • 1 tbsp baking powder
  • 1 tbsp sugar
  • 2 tsp oil
  • 1/2 tsp salt
  • 1/4 C mini chocolate chips optional
Pancake Skewer Ingredients
  • Bamboo Skewers
  • 2 bananas sliced
  • 1 pint strawberries hulled and sliced
  • 1/4 cup nutella
  • 1 carton blueberries
Instructions
  1. Add all ingredients to blender and pulse until smooth and throughly mixed.
  2. If using a Blendtec.. press "batter" button and allow it to cycle.
  3. Pour batter using a half tablespoon measuring spoon and pour into circles on a non-stick griddle over medium-high heat.
  4. Add a few mini chocolate chips to the top. (optional)
  5. When the pancakes start to bubble, flip and cook the other side.
  6. Transfer to a cooling rack.
  7. Using a bamboo skewer thread 4 mini pancakes, spread with Nutella, a banana slice, a strawberry slice, and a blueberry.
  8. Can be served immediately or at room temperature.
