Tangy Black Beans and Rice – Pressure Cooker

Delicious and tangy black beans and rice made easy in a pressure cooker!

Ingredients

  • 2 cup uncooked long-grain rice
  • 4 cup chicken or veggie broth
  • 1 can black beans rinsed and drained
  • ¼ cup Salsa Verde
  • 1 garlic clove minced
  • 1 teaspoon Cumin
  • 2 limes juiced
  • ¼ cup chopped cilantro
  • salt to taste

Instructions

  • Add all ingredients except lime, cilantro and salt to Pressure Cooker and stir.
  • Place lid on and secure. Close seal.
  • Select Rice/Risotto.
  • When done cooking, fluff rice and stir in cilantro, rice and salt.

Notes

Tastes great as a side, as a burrito bowl or in burritos! Also tastes great with avocado!
