Chop up cantaloupe ,watermelon, honeydew and cucumber into bite size pieces or thin slices You can chop them however small or large as you want. Combine in large bowl.
In a small bowl combine cilantro, lime juice and salt. Stir and pour over. Toss to combine.
I like this salad best served chilled. Chill your melons ahead of time so they ll be cold if serving immediately. If you are not serving immediately toss together and place in fridge.
I recommend only tossing the ingredients together the day of serving. You can make the dressing and slice the melons a day before, store in fridge. Then toss together right before serving.
To make sure you're picking the best cantaloupe and honey dew melon smell the spot where it was detached from the rind. If the little circle at the bottom of the melon smells strongly of the melon you know you have a good one. If you can't smell anything it probably isn't the sweetest melon.
