Ingredients
  • 2 TBS Flour
  • 2 TBS Butter
  • 1 cup milk
  • 1 cup broth
  • 1 tsp salt
  • 1 tsp pepper
  • 1/4 cup green onions chopped
  • 2 cup sharp cheddar cheese
  • 1/2 cup parmesan cheese
  • 1 cup sour cream
  • 32 oz bag of diced potatoes
  • 2 cup corn bread
Instructions
  1. Set potatoes out to thaw. I like to place them in a colander over the sink and let sit for a few hours.
  2. In a skillet melt butter of med heat. Whisk in flour and let bubble for one minute. Slowly stir in milk and broth. Add in seasonings. Then thickened turn off heat and let cream of chicken cool a little.
  3. In large bowl add potatoes, 1 1/2 cup sharp cheddar cheese, parmesan cheese, green onion, sour cream and cream of chicken. Stir together until well combined.

  4. Place in 9x13 pan and top with remaining cheese and corn flakes.

  5. Bake at 350 for about 45 minutes or until top is golden.

Recipe Notes

WHAT IS THE DIFFERENCE BETWEEN THIS RECIPE AND FUNERAL POTATOES?

There really is no difference, other than this uses a homemade cream of chicken. You can also substitute the corn flakes for breadcrumbs if you prefer! 

CAN I MAKE THIS AHEAD OF TIME? 

YES! I you can prepare it, cover with foil and stick it in the fridge a day before you need it. I recommend removing from the fridge an hour before baking so it can come to room temperature.

I DON'T NEED TO MAKE THIS GLUTEN FREE, CAN I USE REGULAR FLOUR? 

YES! You may use regular flour if you have no gluten restrictions! It will work the same as gf flour. 

DO I HAVE TO THAW YOUR POTATOES? 

I HIGHLY recommend it. I like to set mine in the fridge the night before OR place in a colander in the sink a few hours before needing them

I FORGOT TO THAW MY HASHBROWNS WHAT DO I DO. 

If you hash browns are too clumped to be able to separate you can cautiously defrost them in the microwave. If you can separate your hash browns it is ok to mix them with your other ingredients, just add additional cooking time. about 20 minutes.
