Funeral Potatoes

Cheesy potatoes casserole is one of the best comfort foods of all time.

Ingredients

  • 2 TBS Flour
  • 2 TBS Butter
  • 1 cup milk
  • 1 cup broth
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 cup medium cheddar cheese
  • 1 cup sour cream
  • 32 ounces bag of diced potatoes
  • 2 cup corn flakes
  • ¼ cup green onions chopped optional for topping

Instructions

  • Set potatoes out to thaw.
  • In a skillet melt butter of med heat. Whisk in flour and let bubble for one minute. Slowly stir in milk and broth. Add in seasonings. Then thickened turn off heat and let cream of chicken cool a little.
  • In large bowl add potatoes, 1 ½ cup sharp cheddar cheese, sour cream and cream of chicken. Stir together until well combined.
  • Place in 9x13 pan and top with remaining cheese and corn flakes.
  • Bake at 350 for about 45 minutes or until top is golden.

Notes

Can I make this ahead of time?
Yes you can prepare it ahead of time. Do everything except adding your corn flakes. Cover and refrigerate. An hour before baking remove from fridge to allow dish to come to room temp. Top with cornflakes and then bake.
How do I store leftovers?
Place leftovers in an air tight container and store in the fridge for 5-7 days.
Is this recipe the same as funeral potatoes?
YES! some funeral potatoes call for cream of chicken soup. If you prefer that method you would not make the roux with flour, butter, broth and milk. Instead add in a can of cream of chicken soup, sour cream and spices. Follow directions from then on.
