Lentil Bruschetta

  • ½ lb steamed lentils
  • 1 TBS Olive Oil
  • 4-5 diced tomatoes
  • 10 basil leaves
  • 1 garlic cloves
  • 1 teaspoon salt
  • a few grinds of fresh pepper
  • ½ teaspoon oregano leaves
  • feta
  • 1 avocado diced
  • 2 green onions chopped


  • Dice tomatoes, basil, onion very small. Mince garlic and add in spices.  
  • Rise lentils and mix with tomatoes and spices.
  • Add Avocado and feta stir gently till combined.
  • Allow bruschetta to set and flavors merry at least one hour before serving. Serve with crackers, baguette, or tortilla chips!


*If you do not have fresh tomatoes you can opt for a quality brand of canned diced tomatoes. Use TWO cans to sub for the right amount of tomatoes it calls for.
