Lemon Cake Mix Cookies

Ingredients

Lemon Cookies

  • 1 lemon cake mix
  • 2 eggs
  • cup plain greek yogurt or ½ cup oil
  • ½ cup powdered sugar

Glaze

  • 2 cup powdered sugar
  • 1 ½ Tablespoon oil
  • 1 ½ Tablespoon water
  • zest of one lemon
  • juice of ½ lemon

Instructions

Cookies

  • Mix cookie ingredients. The dough is very sticky I recommend using a hand or stand mixer. Powder hands and surface with powder sugar to keep dough from sticking too much on your hands.
  • Using a cookie scoop portion and roll into uniform balls.
  • bake at 375 for about 6-8 minutes.

Glaze

  • mix all ingredients until smooth.
  • Place in a ziplock bag and cut a tiny tip of the bag off. Or spread a generous spoonful over cookies.

PRO KITCHEN TIPS

  • Don’t Overmix the Dough: Once you start adding dry ingredients to wet, mix until just combined. Overmixing can result in tough cookies.
  • Use Parchment Paper or a silicone mat: Line your baking sheets with parchment paper or a silicone baking mat to prevent cookies from sticking and ensure even baking. I find doing this keeps the bottoms of the cookies from getting too brown.
  • Use a cookie scoop: Use a cookie scoop to make sure all of the cookies are the same size. This helps them to bake evenly.
  • Let Them Cool: Allow the cookies to cool on the baking sheet for a 1-2 minutes before transferring them to a wire rack to cool completely. This helps them set and maintain their shape.
