Lemon Cookies
- 1 lemon cake mix
- 2 eggs
- ⅓ cup plain greek yogurt or ½ cup oil
- ½ cup powdered sugar
Glaze
- 2 cup powdered sugar
- 1 ½ Tablespoon oil
- 1 ½ Tablespoon water
- zest of one lemon
- juice of ½ lemon
Cookies
Mix cookie ingredients. The dough is very sticky I recommend using a hand or stand mixer. Powder hands and surface with powder sugar to keep dough from sticking too much on your hands.
Using a cookie scoop portion and roll into uniform balls.
bake at 375 for about 6-8 minutes.

- Don’t Overmix the Dough: Once you start adding dry ingredients to wet, mix until just combined. Overmixing can result in tough cookies.
- Use Parchment Paper or a silicone mat: Line your baking sheets with parchment paper or a silicone baking mat to prevent cookies from sticking and ensure even baking. I find doing this keeps the bottoms of the cookies from getting too brown.
- Use a cookie scoop: Use a cookie scoop to make sure all of the cookies are the same size. This helps them to bake evenly.
- Let Them Cool: Allow the cookies to cool on the baking sheet for a 1-2 minutes before transferring them to a wire rack to cool completely. This helps them set and maintain their shape.
