For Salad

  • 2 cups mixed greens
  • ½ pear sliced
  • ¼ cup pomegranate seeds
  • cup crumbled blue cheese

For Dressing

  • ¾ cup olive oil
  • juice from one lemon
  • cup white wine vinegar
  • ¼ cup fresh raspberries
  • salt and pepper to taste

  • Combine all salad ingredients on a dinner place.
  • Place all dressing ingredients in a blender and blend until smooth.
  • Transfer to an airtight container and store leftovers in the fridge for up to a week.
