For Salad
  • 2 cups mixed greens
  • 1/2 pear sliced
  • 1/4 cup pomegranate seeds
  • 1/8 cup crumbled blue cheese
For Dressing
  • 3/4 cup olive oil
  • juice from one lemon
  • 1/8 cup white wine vinegar
  • 1/4 cup fresh raspberries
  • salt and pepper to taste

  1. Combine all salad ingredients on a dinner place.
  2. Place all dressing ingredients in a blender and blend until smooth.
  3. Transfer to an airtight container and store leftovers in the fridge for up to a week.
