Ingredients

Apple Cake

  • 4 cup peeled and grated Green Apples about 6-7 apples, Granny Smith are great!
  • 2 cup Sugar
  • 2 cup Flour all-purpose or whole wheat
  • 1 ½ teaspoon Baking Soda
  • 1 teaspoon Salt
  • 2 Eggs
  • ¾ cup Vegetable Oil
  • 2 teaspoon Vanilla

Cinnamon Cream Cheese Glaze

  • 4 oz. Cream Cheese
  • ½ cup salted butter browned
  • 5 cup Powdered Sugar
  • 1 teaspoon Vanilla
  • 5-6 Tablespoons heavy cream can sub milk

Instructions

Apple Cake

  • Peel and grate your apples. 4 loosely-packed cups takes about 6-7 apples depending on how large they are.
  • Mix the apples with sugar.
  • In a sperate bowl sift dry ingredients.
  • Add in remaining ingredients including apples.
  • Mix with a hand blender until combined.
  • Pour into a greased bundt pan or 9x13 pan.
  • Bake at 350 Degs F for 50 mins. Check at 40 mins for doneness.
  • Allow to cool and frost.

Cinnamon Cream Cheese Glaze

  • In a stand-up mixer using the whisk attachment, mix the cream cheese and butter on high until smooth and creamy, 2-3 minutes.
  • Add in powder sugar and vanilla.
  • Add milk in a tablespoon at a time until desired consistency is reached.
  • Mix well.
