Apple Cake
- 4 cup peeled and grated Green Apples about 6-7 apples, Granny Smith are great!
- 2 cup Sugar
- 2 cup Flour all-purpose or whole wheat
- 1 ½ teaspoon Baking Soda
- 1 teaspoon Salt
- 2 Eggs
- ¾ cup Vegetable Oil
- 2 teaspoon Vanilla
Cinnamon Cream Cheese Glaze
- 4 oz. Cream Cheese
- ½ cup salted butter browned
- 5 cup Powdered Sugar
- 1 teaspoon Vanilla
- 5-6 Tablespoons heavy cream can sub milk
Apple Cake
Peel and grate your apples. 4 loosely-packed cups takes about 6-7 apples depending on how large they are.
Mix the apples with sugar.
In a sperate bowl sift dry ingredients.
Add in remaining ingredients including apples.
Mix with a hand blender until combined.
Pour into a greased bundt pan or 9x13 pan.
Bake at 350 Degs F for 50 mins. Check at 40 mins for doneness.
Allow to cool and frost.
Cinnamon Cream Cheese Glaze
In a stand-up mixer using the whisk attachment, mix the cream cheese and butter on high until smooth and creamy, 2-3 minutes.
Add in powder sugar and vanilla.
Add milk in a tablespoon at a time until desired consistency is reached.
Mix well.
