Creamy Tuscan Chicken

  • 4 chicken breasts
  • 2 Tablespoon olive oil
  • pinch of salt
  • pinch of pepper
  • 1 ½ cup heavy cream
  • ½ cup white wine
  • 4 cloves garlic minced
  • 2 Tablespoon Basil Pesto
  • ¼ cup parmesan cheese
  • handful of basil chopped
  • 1 cup chopped spinach


  • Cut chicken in to bite size pieces. season with salt and pepper.
  • In a skillet, heat olive oil and add chicken. Cook until just browned
  • Remove chicken from pan, but keep pan heated. Pour in white wine and allow to boil and reduce in half.
  • Add cream, cheese, pesto, garlic and mix.
  • Bring sauce to a simmer and add basil, spinach and chicken.
  • Serve over about ½ box of your favorite noodles.
