Chocolate Muffin Recipe

Ingredients

  • 1 box Chocolate Cake mix that makes 24 cupcakes/ can be gluten free
  • 2 egg whites
  • Cup water
  • 14 ounces can pumpkin
  • 1 teaspoon vanilla
  • 1 cup chocolate chips plus extra for topping muffins

Instructions

  • Preheat oven to 425. Mix all ingredients in large bowl.
  • Fill in cupcake tin with 3 tbs of batter. Let batter rest for 15 minutes.
  • Cook at 425 for 6 minutes and the lower heat to 350 for about 7 minutes

Notes

Can I use Pumpkin Pie Filling if thats all I have?
YES! It will still work great. It usually includes cinnamon, ginger, nutmeg and allspice.
