Monster Halloween Popcorn

Gooey, chewy, marshmallow popcorn, made to make like a spooky slime monster.  This Monster Halloween Popcorn is so fun and delicious that you'll come back to this recipe year after year.

Ingredients

  • 20 cups popcorn (2 standard bags popped)
  • 1 cup butter
  • 1 ⅓ cup sugar
  • ½ cup karo syrup
  • 1 teaspoon vanilla
  • 4 cups mini marshmallows
  • 2-3 drops green food coloring
  • ¼ cup candy eyes

Instructions

  • Prepare by popping your popcorn.
  • In a large saucepan, combing butter, sugar, and karo syrup.
  • While continually stirring, bring to a boil, and boil for 1 minute.
  • Remove from heat. Add vanilla and stir.
  • Add in mini-marshmallows and stir until melted.
  • Add 2-3 drops of green food coloring and stir until combined.
  • Pour over popped popcorn and toss until coated. Add candy eyes.

Notes

Pop your popcorn.  There are several methods for doing this:
  1. Use microwave popcorn.  You'll need two 3.4 oz bags popped.
  2. Cook in paperbag. Did you know you can pop popcorn kernels in a paperbag in your microwave just like you do the store-bought kind? Add ½ cup of kernels to the bag and cook in the microwave.  You'll need to pop two bags worth.
  3. Air popper - this is what I grew up on. You'll need to use about a cup of kernels.
  4. Stir crazy - follow instructions for oil to kernel ratio to pop about 20 cups of popcorn.
If I'm using microwave popcorn, what kind should I use?
Use your favorite. Light popcorn, movie theatre, or butter all work,  just do not use SWEET popcorn, like kettle corn.
How do I store monster halloween popcorn?
IF there are leftovers store them in a air tight container, even a ziplock bag is great. It can stay at room temp.
Can I make this ahead?
Yes! you can make this a day ahead if needed. It will stay pretty dang soft and fluffy until it’s all devoured.
Can I make popcorn balls with this recipe?
YES! Marshmallow popcorn is pretty sticky in texture so making a ball will not be problem. Once the mixture is all combined instead of leaving it in the bowl to cool I recommend laying it out on parchment paper. When it is still warm but not hot form them into popcorn balls and let cool.
