World's Best Potato Soup

Ingredients

  • 4-5 Red Potatoes cubed
  • 1 bunch green onions Diced
  • 3 carrots diced
  • 5 celery stalks Sliced
  • 3 cups water
  • 1 ½ cups ham steak diced
  • 3 cups milk
  • 8 ounces whipping cream
  • 3 tablespoon corn starch
  • 6 tablespoon water
  • 8 ounces sour cream
  • salt
  • pepper
  • onion powder
  • parsley flakes optional

Instructions

  • Combine potatoes, green onions, celery, and carrots in a pressure cooker. Cover with just enough water to cover (About 3 cups). Cook on manual pressure for 2 minutes. Use a quick release to release steam.
  • Set pot to saute. Add Milk and whipping cream to the cooked veggies.
  • Add diced ham.
  • Create a slurry of corn starch and water and add to soup. Stir until thickened.
  • Season to taste with salt, pepper, onion powder, and parsely.
  • Add sour cream and stir until melted.

Notes

For stovetop:
  1. Add potatoes, carrots, green onions and celery to a dutch oven.  Cover with water.  Boil until potatoes are fork tender.
  2. Reduce heat to a simmer. Add Milk and whipping cream to the cooked veggies.
  3. Add diced ham.
  4. Create a slurry of corn starch and water and add to soup. Stir until thickened.
  5. Season to taste with salt, pepper, onion powder, and parsely.
  6. Add sour cream and stir until melted.

Pro Tip: A cornstarch slurry is a mixture of a cold liquid with cornstarch. It is used as a thickening agent. A typical cornstarch slurry will consist of 2 parts cold water and 1 part cornstarch.
