Spinach Balls
  • 20 oz packages of frozen chopped spinach thawed and drained or 2 cups fresh spinach
  • 2 cups italian bread crumbs
  • 1 cup grated parmesan cheese
  • 1/2 cup butter melted
  • 4 eggs lightly beaten
  • 1/2 teaspoon pepper
  • 1/2 teaspoon salt
Mustard Sauce
  • 1/3 cup ground mustard found on the spice aisle
  • 1/2 cup white vinegar
  • 1/3 cup sugar
  • 1 beaten egg
Spinach Balls
  1. If using fresh spinach, place it in a large bowl and pour 3 cups boiling water over top. If using frozen spinach, thaw and squeeze out excess liquid.

  2. Let stand for 5 minutes.Meanwhile add breadcrumbs to a large mixing bowl.

  3. Add grated parmesan cheese.

  4. Pour in eggs.

  5. Add melted butter.

  6. Season with salt and pepper.

  7. Squeeze liquid from spinach.

  8. Add wilted spinach to mixing bowl. With clean hands, mix all ingredient until well combined.

  9. Spray a baking sheet with non-stick spray.

  10. Roll into 1 inch balls.Place on baking sheet and bake at 350 degrees for 20 minutes or until golden.

Mustard Sauce
  1. Whisk all ingredients together and transfer to a small saucepan.
  2. Bring just to a boil whisking the entire time.
  3. Can be served warm or at room temp.
