Baked Potato Wedges
Cut potatoes into "steak french fries" size. {I like them thicker...but that means it will also take a little longer to cook than skinny ones.}
Drizzle potatoes with olive oil and lightly toss with tongs.
Place on parchment-lined baking sheet in a single layer.
Sprinkle salts and pepper over the potatoes.
Bake 400 for 40 minutes or until fork tender
Loaded Fries
On a separate rimmed baking tray spread three-fourths of the sour cream sauce.
Place hot potatoes on top of sour cream sauce.
Drizzle remaining sour cream ranch sauce on potatoes
Sprinkle bacon and chives.
Place under broiler for a few seconds to re-melt cheese.
Your potato wedges with cheese are going to be messy and delicious.
