- 4 salmon filets
- ¼ cup olive oil
- 1 teaspoon paprika
- ½ teaspoon Italian seasoning
- ½ teaspoon salt
- ¼ teaspoon pepper
- 1 avocado diced
- 1 roma tomato diced
- juice of one lime
- salt to taste
Prepare your marinade by adding Italian seasoning, paprika, salt and pepper to a medium bowl.
Add olive oil and whisk to combine.
Coat salmon filets with marinade and allow to sit for 30 minutes.
Cook salmon on a grill that has been preheated to about 450-500 degrees Fahrenheit. Place the salmon skin side down on oiled grates. Cook for about 5-6 minutes. Flip and cook for an additional 5 minutes, or until internal temp reads 145 degrees Fahrenheit.
Prepare avocado relish by combining diced avocado, diced tomato, lime juice, and salt to taste in a medium bowl. Toss to combine.
Top salmon filets with 2 tablespoon of avocado relish. Serve immediately.
