Summer Strawberry Caprese Salad

Equipment

  • hard boiled egg slicer optional
  • Chef's Knife
  • large salad bowl

Ingredients

  • 2 lb strawberries hulled and sliced
  • 1 pint blueberries
  • 8 ounces mozarella pearls drained
  • handful of fresh basil chiffonade
  • 2 tablespoon honey
  • 2 tablespoon balsamic vinegar
  • ¼ cup olive oil
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper

Instructions

  • Prep: clean, hull and slice your strawberries. Drain your mozzarella. Chiffonade your basil.
  • In a small bowl combine honey, balsamic vinegar, olive oil, salt, and pepper.  Whisk until combined.
  • Combine strawberries, blueberries, mozarella pearls, and basil in a large bowl.
  • Pour on top of salad and toss to combine. Let stand 15 minutes before serving.

Variations

  • Add additional berries: Try adding in blueberries, raspberries, or blackberries to your salad ingredients- they are all delicious in this salad and add some nice color and texture.
  • Add nuts: To add a crunchy texture, try adding some chopped walnuts, sugared almonds, or pecans to the salad.
  • Add avocado: Adding slices of avocado to the salad adds a creamy texture.
  • Swap the cheese: If you don't care for mozzarella balls, try swapping out the mozzarella for crumbled goat cheese, crumbled feta cheese, or blue cheese.
