Disneyland Bengal BBQ Copycat – Sweet & Sour Kabobs and Bacon Wrapped Asparagus

Sweet & Sour Kabobs
- 3 chicken breasts cut into bite sized cubes
- 1 cup pineapple chunks
- 1 red bell pepper diced
- 1 cup chicken broth
- ⅓ cup sugar
- ⅓ cup rice vinegar
- 4 teaspoons cornstarch
- 1 tablespoon soy sauce
- 1 tablespoon ketchup
Bacon Wrapped Asparagus Skewers
- 1 bunch asparagus
- 1 pound bacon
Sweet and Sour Skewers
For Kabobs thread chicken, pineapple, a pepper on to wooden or metal skewers, alternating ingredients and leaving some space in between.
In a small sauce pan combine remaining ingredients.
Bring a a simmer over medium high heat, whisking constantly until sauce is thickened.
Reserve half of sauce for use at the table.
Brush remaining sauce over kabobs.
Grill over medium heat for 3-4 minutes each side, or until chicken is cooked thru.
Bacon Wrapped Asparagus Skewers
Wash and trim asparagus. Cut into 2 inch pieces
Cut bacon slices into thirds.
Wrap bacon around asparagus piece and thread onto metal skewer.
Grill over medium heat for 3 minutes each side, or until bacon is crisped.
