Homemade Raspberry Limeade

Remember drinking limeade as a kid? I do! My mom would buy those frozen concentrates that you mix with water and we'd enjoy homemade limeade all summer.  I still love it even now.  And this homemade raspberry limeade takes that classic drink over the top with one simple addition!

Ingredients

  • 1 pint raspberries rinsed
  • ½ cup lime juice about 6 limes
  • 1 cup sugar
  • 4 cups water divided

Instructions

  • In a large skillet combine raspberries, sugar, and 1 cup of water.  Bring to a simmer and boil for 2 minutes.  Remove from heat and let cool.
  • Transfer cooled mixture to a blender and blend for 30 seconds until smooth.  If desired, strain mixture thru a fine sieve to remove raspberry seeds.
  • Squeeze the juice from your limes.  You will need ½ cup of  fresh lime juice - about 6 limes.
  • Combine raspberry syrup, lime juice, and remaining water in a 2qt pitcher. Stir to combine.  Serve over ice.

Notes

Alternate Method of Preparation - In a High Power Blender
We will be using a blender to make this drink.  I use a Blendtec - one of my most used kitchen appliances. You'll also need:
  • 1 pint raspberries, rinsed
  • 6 limes, peeled
  • ¾ cup sugar
  • 1 cup ice cubes
  • 3 cups water
  1. In your blender jar, combine fresh raspberries, peeled limes, ice, sugar, and water.
  2. Blend until smooth.  If using the Blendtec - use the whole juice setting.
Raspberries have a lot of little seeds that likely won't blend up using a standard blender. If desired you can pour the mixture through a fine sieve to remove them.
Raspberry limeade is best served freshly made and well chilled or over ice.
If serving up limeade for a party in a pitcher you can add slices of lime and fresh berries to the pitcher to make it look more festive.
Store leftovers in the fridge for up to two weeks or in your freezer for about 3 months.
Adjust the flavor to your own tastes. Add water for a lighter flavor, or add more simple syrup for a sweeter flavor.
