Delicious and tangy black beans and rice made easy in a pressure cooker!

Ingredients
  • 2 C uncooked long-grain rice
  • 4 C chicken or veggie broth
  • 1 can black beans rinsed and drained
  • 1/4 C Salsa Verde
  • 1 garlic clove minced
  • 1 tsp Cumin
  • 2 limes juiced
  • 1/4 C chopped cilantro
  • salt to taste
Instructions
  1. Add all ingredients except lime, cilantro and salt to Pressure Cooker and stir.
  2. Place lid on and secure. Close seal.
  3. Select Rice/Risotto.
  4. When done cooking, fluff rice and stir in cilantro, rice and salt.
  5. Enjoy!
