  • 1 head of red leaf lettuce chopped
  • 3 stone fruit (plucots, peaches, plums, apricots) quartered, pits removed
  • 1/2 cup blueberries
  • 1/4 cup chopped pecans
  • 1 oz crumbled goat cheese
  • 1 cup fresh basil
  • 1 tbsp honey
  • 1/2 cup rice vinegar
  • 1/2 cup olive oil
  • salt and pepper to taste
  1. In a large bowl combine lettuce, stone fruit, pecans, blueberries, and goat cheese.

  2. In a blender combine basil, honey, vinegar, oil, and salt and pepper. Blend until smooth. Serve dressing on the side of salad.
