Baked Apple Salad

Baked apple salad is the perfect side for your fall meals. Sweet apples combine with crisp greens for a bright and hearty dinner addition.

Ingredients

Salad

  • 2 gala apples cored and quartered
  • 2 tablespoon brown sugar
  • 1 tablespoon chopped pecans
  • 1 tablespoon melted butter
  • 4 cups red leaf lettuce chopped
  • cup dried cranberries optional
  • Apple Cider Vinegar Dressing

Dressing

  • ¾ cup olive oil
  • ¼ cup apple cider vinegar
  • 3 tablespoon honey
  • ¼ teaspoon salt
  • ¼ teaspoon pepper

Instructions

Salad

  • Spray a baking dish with non-stick spray. Place apples cut side up in dish. Top with brown sugar, pecans, and drizzle with butter.
  • Bake at 350 degrees for 15-20 minutes until apples are tender.
  • While apples cool, make dressing.
  • Assemble salad by starting with a bed of greens, add cranberries, and place baked apples on top. If any pecans have fallen in baking dish, add those to the salad also.
  • Serve with dressing on the side.

Dressing

  • In a blender combine all ingredient. Pulse until smooth.
