Radish and Cucumber Salad with Lemon Honey Poppyseed Vinaigrette

Ingredients

  • 1 bunch of Radishes rinsed and diced
  • ½ Cucumber diced
  • Shredded Carrots
  • Minced Cilantro
  • Mixed Greens
  • Feta Cheese

Lemon Honey Poppyseed Vinaigrette

  • ½ C Lemon Juice freshly squeezed, 2-3 lemons
  • ¼ C Apple Cider Vinegar
  • ¼ C Extra Virgin Olive Oil
  • 1 Tablespoon Poppyseeds
  • 1 ½ Tablespoon Honey substitute sugar to make it sweeter
  • 1 Clove Garlic minced or pressed
  • pinch of Salt

Instructions

  • Toss salad ingredients together.
  • Combine vinaigrette in a container and shake well to combine. Allow to rest for 30-60 mins for garlic to infuse and flavors to be stronger.
  • Drizzle over salad and serve.
