- 1 bunch of Radishes rinsed and diced
- ½ Cucumber diced
- Shredded Carrots
- Minced Cilantro
- Mixed Greens
- Feta Cheese
Lemon Honey Poppyseed Vinaigrette
- ½ C Lemon Juice freshly squeezed, 2-3 lemons
- ¼ C Apple Cider Vinegar
- ¼ C Extra Virgin Olive Oil
- 1 Tablespoon Poppyseeds
- 1 ½ Tablespoon Honey substitute sugar to make it sweeter
- 1 Clove Garlic minced or pressed
- pinch of Salt
Toss salad ingredients together.
Combine vinaigrette in a container and shake well to combine. Allow to rest for 30-60 mins for garlic to infuse and flavors to be stronger.
Drizzle over salad and serve.
