Coconut Milk Hot Chocolate

Creamy, dreamy, rich and smooth Coconut Milk Hot Chocolate.  Made with real chocolate and topped with toasted coconut - this cocoa recipe will top any version from your coffee shop.

Ingredients

  • ¼ cup sweetened flake coconut
  • 16 ounces low fat cows milk
  • 1 15 ounces can coconut milk
  • 1 cup chocolate chips
  • 1 teaspoon coconut extract
  • whipped cream

Instructions

  • In a small skillet add sweetened coconut flakes.  Over medium heat toast, stirring frequently, until golden brown.  Set aside.
  • In a large saucepan, add cows milk.
  • Pour in canned coconut milk.
  • Add chocolate chips. Using medium heat, stir until chocolate chips start to melt.
  • Add 1 teaspoon coconut extract.
  • Stir and cook until frothy and chocolate is completely combined.
  • Pour into four mugs.
  • Top with whipped cream and reserved toasted coconut.

Can I use all coconut milk?
Yes! I would recommend using the coconut milk from a carton in place of the dairy milk.  The canned milk is too thick to use in place of the cow's milk.
Is coconut milk better than cow's milk?
Coconut milk has fewer nutrients than dairy milk. While many brands of coconut milk provide calcium, vitamin A, vitamin B12 and vitamin D, these nutrients are all fortified.
What's the difference between hot chocolate and hot cocoa?
Hot cocoa is made from cocoa powder. Hot chocolate is a liquid made from cocoa beans. Even though the terms are used interchangeably by many chocoholics, the two hot beverages are not the same.
