Berry and Ricotta Bruschetta

Toasted baguette, smooth and creamy ricotta, and fresh berries tossed in a bright dressing.  Together these ingredients make an appetizer made in heaven!  This sweet and fruity twist on bruschetta is easy and delicious.  Let us show you how to make it!

Ingredients

  • 1 baguette sliced
  • 2 tablespoon corn oil
  • juice of one large lemon
  • 2 tablespoon honey
  • teaspoon cinnamon
  • 7-8 mint leaves chiffonade
  • 1 cup raspberries
  • ¾ cup blueberries
  • 1 cup strawberries sliced
  • ½ cup ricotta cheese

  • Start off by washing your berries.  You will also need to chiffonade some mint.  Let me show you how:
  • This cutting technique is simple.  Layer your mint leaves on top of one another.
  • Roll them into a tight roll.
  • Slice into ¼ slices, which makes ribbons.
  • Use as a topping for this delicious appetizer.

How to Prepare The Berry Bruschetta

  • Slice your baguette and place slices on a baking sheet.  Brush corn oil on the tops.  Broil for 1-2 minutes until golden brown.
  • Prepare dressing by whisking together lemon juice, honey, and cinnamon.
  • Toss berries with dressing.
  • Add mint ribbons and toss.
  • Spread about 1 tablespoon over each toasted baguette slice.
  • Top with berry mixture.

How do you keep bruschetta from getting soggy?
Toasting your bread first helps prevent a soggy appetizer.  I like broiling, but you can also grill the baguette slices.
