Honey Mustard Chicken Skewer Marinade

Tender chicken, fresh veggies, and a tangy honey mustard glaze come together in this Honey Mustard Chicken Skewer Marinade recipe.  This will be your new favorite summer grilling meal.  With minimal ingredients, this dish can be prepared in under 30 minutes.

Ingredients

Shish Kabobs

  • 3 chicken breasts
  • 1 zucchini
  • ½ red onion
  • 1 green bell pepper

Honey Mustard Glaze

  • ½ cup corn oil
  • ½ cup Honey
  • cup yellow mustard
  • ½ teaspoon Chili Powder
  • ½ teaspoon salt
  • ¼ teaspoon pepper

Instructions

  • For marinade - combine oil, mustard, honey, salt, pepper, and chili powder in a small bowl.  Whisk to combine
  • Cut your chicken breast into bite sized pieces.  Transfer them to a large bowl with a lid, or a zipper plastic bag.  Pour ½ of marinade over the top and reserve the remainder.  Toss chicken in marinade until well coated.  Refrigerate for 3 hours - up to overnight.
  • Dice your veggies and lace them onto skewers, alternating veggies, and marinaded chicken.
  • Cook on a pre-heated medium-high heat grill. Turn every 3-4 minutes until internal temperature of chicken is 165 degrees.
  • During last 2-3 minutes of cooking, brush on your reserved marinade.
  • Serve immediately.
