  • 4 potatoes russet, red, sweet, any combination, washed and cut into 1" pieces
  • half pound bacon
  • red bell pepper diced
  • half yellow onion chopped
  • one bunch kale washed and torn into pieces
  • egg
  • salt
  • pepper
  1. Cut bacon into 1" slices. Fry in frying pan or cast-iron skillet. Set bacon aside.
  2. Fry potatoes in bacon grease until golden until almost softened.
  3. Add red bell pepper and onion. Cook until softened and potatoes lightly browned.
  4. Add kale and cook additional 3 minutes, or until kale has softened.
  5. Top with poached egg, or serve alongside eggs cooked to your liking.
