Best Breakfast Burrito

Quick and easy - this is the best breakfast burrito recipe.

Ingredients

  • 10 ounces hash browns
  • 1 tablespoon canola oil
  • 4 slices bacon
  • 4 eggs
  • 3 tablespoon milk
  • ½ cup shredded cheddar cheese
  • 4 burrito size flour tortillas
  • pico salsa, or hot sauce (optional)

Instructions

  • Cook your hash browns by add canola oil to a large skillet.  Heat over medium-high heat.  Add hash browns and spread into an even layer.  Sprinkle with salt and pepper.  Cook several minutes until under side is browned, flip.  Cook to desired doneness.  I like mine on the crunchier side, but some like them soft and warm.
  • In another large skillet, cook bacon.  Heat pan over medium heat. Add bacon and cook for a few minutes each side, until the bacon reaches your desired doneness.  Transfer to a plate lined with paper towel.
  • In a medium bowl add cracked eggs, milk, and salt and pepper.  Whisk until smooth. Spray a skillet with non-stick spray, and add egg mixture.  Cook for medium heat.  Use a spatula to scrape the bottom of the skillet until no liquid remains.
  • To assemble burrito, layer a warm tortilla with ¼ for the hash browns, 1 piece of bacon crumbled, ¼ of the eggs, ¼ of the cheese, and pico, salsa, or hot sauce (optional). Roll up and enjoy.

Can I freeze these burritos?
We love to eat these burritos right away, but they also freeze like a dream.  Wrap them in plastic wrap and place in a freezer bag and they will keep in the freezer for a month.  Just remove them from the plastic, wrap in a damp paper towel, and microwave before serving.  They are a perfect quick breakfast.
Can I switch up the meat in this burrito!

Why are my burritos soggy?
The culprit is usually putting ingredients inside while too warm.  This particular recipe doesn't result in a soggy burrito often, but if you run into this issue - allow your ingredients to cool slightly before making your burrito.

How to Roll A Burrito
  1. Pull the left flap of the tortilla over the burrito contents, toward the center. It likely won't reach the center, but it should create a pocket that holds one side of your fillings in place.
  2. Pull the right flap of the tortilla over the burrito contents, toward the center.Your tortilla flaps probably won't overlap at this point.
  3. Tuck the top flap of the tortilla underneath the burrito contents using one or two hands. In this step, you should be pulling all of the burrito contents toward your body, into the center of the burrito.
  4. Starting from your body and moving outward, roll the burrito forward. This will bring the burrito together into a cylindrical shape. If you can, let the burrito rest on top of the last little flap for a minute or two; this helps fuse the ends of the tortilla together, making them stick together
