Farmer’s Ham and Egg Breakfast Casserole

Prep the night before, pop in the oven in the morning and it'll be an effortlessly gourmet morning!

Ingredients

  • 3 cups frozen shredded hash brown potatoes
  • ¾ cup pepper jack cheese shredded
  • 1 cup deli honey ham diced
  • ¼ cup green onions diced
  • 4 eggs beaten
  • 1 ½ cups milk
  • teaspoon salt
  • teaspoon pepper

Instructions

  • Coat a 2-quart  baking dish with non-stick cooking spray.  An 8x8 or a cast iron skillet work great.
  • arrange potates evenly in the bottom of the dish. Sprinkle with Cheese, ham and green onions.
  • In a bowl combine eggs, milk, salt, and pepper. Pour egg mixture over potato mixture.
  • Bake, uncovered, in a 350 oven for 40-45 minutes or until a knife inserted near the center comes out clean. Let stand 5 minutes before serving.

Make-Ahead Directions

  • Prepare as above, cover;chill up to 24 hours bake uncovered for 50-55 minutes.

Can I make this ham & egg casserole ahead?
Yes - that is one of the best parts about this meal!  You can make it 24 hours in advance - pop it in the fridge, and bake when ready.  
 
Can I freeze this casserole?
A baked casserole may be frozen, up to 2 months. Thaw in refrigerator overnight and bake. To make ahead/freeze this casserole: you can freeze unbaked casserole up to 2 months.
 
How can I tell when it is cooked?
Bake until a thermometer inserted at the center shows 160° F or a knife inserted near the center comes out clean. 
 
How long do the leftovers last in the refrigerator?
Your leftovers will keep 3-4 days in the refrigerator.  Individual servings can be reheated in the microwave.
 
What kind of pan should I make this in?
For this recipe you'll want to use a 2 quart baking dish.  Options for this include an 8x8 pan (metal, glass, or aluminum), a 10 inch cast iron skillet, or 2qt casserole dish.  If you'd like to double this dish - opt for a 9x13 pan.
