Great Oatmeal Raisin Cookies

Chewy, sweet, and spiced Soft Oatmeal Raisin Cookies are the perfect every occasion cookie. These cookies are full of delicious raisins, warm spices, and a nice chewy middle that will leave you wanting more. They are easy to make, and will become your go-to cookie.

Ingredients

  • 1 cup shortening
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 2 teaspoon vanilla
  • 2 eggs
  • 2 cups flour
  • 1 ½ teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • ½ teaspoon cloves
  • ½ teaspoon nutmeg
  • ½ teaspoon allspice
  • 2 cup quick oats
  • 1 cup raisins

Instructions

  • Preheat oven to 350 degrees F.
  • Cream tougher shortening, granulated sugar, and brown sugar until light and fluffy. About 2 minutes.
  • Mix in vanilla and eggs.
  • Add flour, baking soda, baking powder, salt, cinnamon, allspice, nutmeg, and cloves. Mix until just combined.
  • Add in oats and mix until just combined.
  • Stir in raisins.
  • Drop by the rounded teaspoon onto a baking sheet lined with parchment paper or silicone mat.
  • Bake at 350 degrees 10-12 minutes or until edges just set.
  • Let sit on baking sheet for 1-2 minutes before transferring to a wire rack to cool.

Variations
  • Cranberry and white chocolate oatmeal cookies - sub ½ cup dried cranberries and ½ cup white chocolate chips for the raisins. Delicious!
  • Chocolate chip oatmeal cookies - this is another favorite. Sub 1 cup of semi-sweet chocolate chips for the raisins.
  • Add nuts - add ½ cup chopped nuts for a little extra bite in your cookies.
  • Add coconut flakes - add flake coconut for a tropical touch.
  • Add different flavored chips - butterscotch, toffee, white chocolate, or dark chocolate are all delicious in this dough.
