▢⅓ cup rice vinegar ▢4 tablespoon olive oil ▢¼ cup mayo ▢3 oz. cojita cheese or queso fresco ▢juice of 1 lime ▢1 clove garlic ▢1 jalapeno pepper washed, seeds removed ▢½ cup cilantro leaves washed ▢½ Tablespoon salt
Add all ingredients to a blender.
Process until smooth.
The dressing will firm up when refrigerated due to the cojita.
