Strawberry Shortcake

ingredients – 2 cups flour – ⅓ cup sugar divided – ¾ teaspoon baking powder – ¼ teaspoon salt – 1 cup whipping cream – 1 lb strawberries – ¼ cup confectioners sugar Whipped Cream – 3 tablespoon confectioners sugar – 1 cup whipping cream  – 1 teaspoon vanilla

Step 1: Combine flour, sugar, salt, and baking powder. Step 2: Mix well.  Step 3: Gradually add the cream in, tossing with fork until it clumps. Step 4: Gather dough together, but do not knead. 

Step 5: Form into a 6" log. Cut into 1" discs and place on baking sheet. Step 6: Bake at 400 for 14-20 minutes until golden.  Step 7: Hull strawberries, and quarter.  Step 8: Puree 1/4 of the strawberries with confectioners sugar.

Step 9: Add back to sliced berries. Toss and cover. Refrigerate until ready to use. Step 10: Pour heaving whipping cream into bowl. Add powdered sugar and vanilla. Do this until a firm peak form. Step 11: Once cake has cooled, cut them in half. Step 12: Layer cake half, strawberries, whipped cream, and second half of cake. Serve immediately.
