SOFT  PUMPKIN COOKIES

Cookies ▢1 ½ cups sugar ▢1 ½ cups shortening ▢15 ounces pumpkin puree ▢2 eggs ▢3 cups flour ▢1 ½ teaspoon cinnamon ▢1 ½ teaspoon baking soda ▢¾ teaspoon salt Frosting ▢3 tablespoon butter ▢½ cup dark brown sugar ▢1 teaspoon vanilla ▢5 teaspoon milk ▢1 cup powdered sugar

INGREDIENTS

Preheat oven to 350 degrees. Cream together the shortening and sugar.

STEP 1

Add pumpkin, eggs, and cinnamon. Mix to combine.

STEP 2

Add flour, baking soda, and salt. Mix until well combined.

STEP 3

Drop by the tablespoon onto a baking sheet.

STEP 4

Bake for 12-14 minutes at 350 degrees. Until cookies are set. Transfer to wire rack to cool.

STEP 5

In a medium mixing bowl cream together butter and brown sugar. Add powdered sugar, vanilla, and milk. Mix until smooth. Add more milk, by the tsp, to thin out the frosting.

STEP 6

Spread frosting over cookies and let cool completely before serving.
