MEDITERRANEAN MINI  FRITTATAS

▢Nonstick cooking spray ▢10 eggs ▢½ cup low fat milk ▢½ teaspoon garlic powder ▢½ teaspoon salt ▢¼ teaspoon ground black pepper ▢½ teaspoon dried parsley ▢3 marinated artichoke quarters chopped ▢6 kalamata olives sliced ▢1 ounces feta cheese crumbled ▢1 teaspoon dill chopped ▢1 to mato diced

INGREDIENTS

Preheat oven to 375 degrees. Spray a muffin tin with nonstick spray. Distribute artichokes, feta, olives, tomato, and dill between 12 muffin cups in your muffin tin.

STEP 1

In a medium bowl whisk eggs, milk, garlic powder, salt, pepper, and parsley.

STEP 2

Fill each muffin cup nearly full with egg mixture.

STEP 3

Bake at 375 for 15-17 minutes until slightly puffed and firm.

STEP 4

Remove from oven and let cool 5 minutes. Loosen edges with a rubber spatula and remove.
