CARDAMOM APPLE MUFFINS

▢2 c flour ▢½ Tablespoon salt ▢1 Tablespoon baking powder ▢¾ Tablespoon cardamom ▢1 granny smith apple cored and chopped ▢2 large eggs ▢½ c sugar ▢1 c milk ▢¼ c canola oil ▢1 Tablespoon vanilla extract Topping ▢¼ c butter softened ▢¼ c walnuts chopped ▢¼ c oats ▢⅓ c brown sugar ▢½ c flour ▢1 Tablespoon cinnamon

INGREDIENTS

Preheat oven to 500 degrees. Combine streusel topping ingredients in bowl with fingers until you have pea-sized clumps.

STEP 1

In large bowl, whisk flour, salt, baking powder, cardamom, and chopped apple.

STEP 2

In third bowl, beat eggs with whisk, add sugar, milk, canola oil, and vanilla extract. Whisk well.

STEP 3

With fork, gently mix wet ingredients into dry. Mix until batter is just barely cohesive, do not overmix!

STEP 4

Grease 6-tin muffin tins or 12-tin muffin tin with butter. Fill each tin ¾ full. Crumble streusel topping over each tin.

STEP 5

Place muffin tin into hot oven, then immediately turn oven temperature down to 400 degrees. Bake 15-25 minutes, depending on how big your muffins are.

STEP 6

Take out when very lightly browning on edges and inserted toothpick comes out clean. Remove from tin after 5 minutes and set on cooling rack.
