BERRY AND RICOTTA BRUSCHETTA

▢1 baguette sliced ▢2 tablespoon corn oil ▢juice of one large lemon ▢2 tablespoon honey ▢⅛ teaspoon cinnamon ▢7-8 mint leaves chiffonade ▢1 cup raspberries ▢¾ cup blueberries ▢1 cup strawberries sliced ▢½ cup ricotta cheese

INGREDIENTS

Start off by washing your berries and chiffonade some mint.

STEP 1

Slice your baguette and place slices on a baking sheet.  Brush corn oil on the tops.  Broil for 1-2 minutes until golden brown.

STEP 2

Prepare dressing by whisking together lemon juice, honey, and cinnamon.

STEP 3

Toss berries with dressing. Add mint ribbons and toss.

STEP 4

Spread about 1 tablespoon over each toasted baguette slice. Top with berry mixture.
