This is one of our family's favorites. I started making it a while ago because 1. I was out of groceries, but had a few veggies. 2. we were out of money till pay day and 3. I was out of time. My favorite way to eat sweet potatoes are in fry form. I love sweet potatoes in all forms with all sorts of different spices and especially with THIS lime cilantro dip. Sprialize a few sweet potatoes, toss in oil (avocado is my favorite) and seasoning salts and toss in the oven. Out comes delicious, baked curly sweet potatoes. Last summer I sat on a warm, sunny SoCal beach next to my dear friend who was eating a lunch similar to this Mexi-quinoa buddha bowl. Gosh it looked so good, and I was SO hungry. As we meandered through Sprouts my 4 year old spotted some brussels sprouts and begged me to get them! Taken aback, and not quite wanting to buy them I tried to put him off by telling him we would swing back and grab them later. When we walked near them at the end of our shopping, sure enough he remembered and asked for them. We walked out of the store with a bag full of sprouts and a head held high. I love smoothies- for my kids. As for myself and drinking them- I don't love them. I've been following a friend's account for years and she is who really turned me on to juicing.
