Fajita Stuffed Chicken... is that even a thing?! Well I just made it a thing and it's delicious! Juicy chicken, rubbed with spices and filled with sautéed bell peppers and chilies. It's a fajita lovers twisted dream! Amazing I know, and to top it off we are hosting a giveaway with American Kitchen! The two pans showcased in today's post will be going to someone special! . . .
Have you ever heard of Apricot Chicken?! It's amazing and you are going to want to give it a try. A few Sunday's ago I entertained my in-laws for dinner. It's always nice to have company over and give the nice dinnerware some use! I served this apricot chicken with veggies, fresh fruit and a few other small sides. The dinner turned out great. I doubled the recipe and cooked about 4 cups of rice. We had 6 adults and 4 children eating with plenty to go around. If we would have wanted seconds- . . .
Have your meal plans this month consisted of tons of healthy chicken and vegetable dishes? Well I have another one for you!!! I promise you, it will not be your everyday healthy meal. And I promise you, you'll want to make it again. We're going Asian with a ginger garlic chicken made sticky and crisp with honey. Cast Iron Cooking--Sticky, Ginger Chicken Staub recently sent each of us a cast iron piece to try out. I already have a large dutch oven, so I really wanted a short, wide, . . .
I just love a good creamy risotto. 'Risotto' is style of cooking rice so that it is more creamy. The creamy happens because the rice is cooked in some type of broth and it releases starches making the entire dish thicken and become creamy. Long grain rice doesn't work so well for this. Short grained rice, particularly Arborio rice is the best. The shorter the grain the more starch. If you wanted to make a simple pot of arborio rice, you simmer some rice in veggie or meat broth and stir and stir, . . .

Are you guys convinced yet that pressure cookers are pretty amazing? Steph's previous post vegetarian chili and pot roast had me drooling.. if you didn't catch her pressure cooker roast and chili recipes you need to go check them out! Today I'm going to share a simple yet delicious black bean and rice recipe. Since I received my Power Pressure Cooker XL a few months ago I've been playing with different recipes and cooking methods. Many so good and quick! But the function I found myself utilizing . . .
Tacos are life. Especially here at OhSo, I don't believe we've met a taco we didn't like. Velvet Taco is one of my favorite taco joints here in Dallas (shrimp and grits taco is next on my list of things to recreate). One of my friends introduced me to their elote. Many of you may have had elote, or corn on the cob with all the traditional Mexican slathering of mayo, lime, cheese, spices. I can't do the mayo, so I was super stoked they didn't use that, AND! and they put it all in a cup for you. I . . .
You guys. I cannot tell you how excited I am about this new recipe. Summer is slowly coming to an end, so you must make this right now. Although I do see it as a warm, light and delicious escape to the tropical Caribbean during the cold winter months, especially when all you've been making is creamy soup and heavy pastas (what, you don't do that during the winter?). I love this because you can do all of the prepwork earlier in the day (or during naptime) so that dinner time isn't as . . .
Today were having an early celebration for FATHERS DAY!! We have a wonderful GIVEAWAY and a perfect meal for the man in your life.... Did you catch yesterday's post with the Cilantro Lime Butter to pair with chicken kabobs? Today's recipe is a perfect match deep flavor and steak. Either herb butter from today or yesterday will please your man, either of these recipes can be used on a either type of meat. And they don't have to be kabobs either. Kabobs are really family friendly for several . . .
One of my favorite things about summer is the juicy, fresh produce. Especially from our farmer's market. ESPECIALLY those of the sugary, sweet variety. Make your simple syrup with juice, lime juice, and sugar. Sometimes I go a little overboard and buy a ton of my favorite fruit, nectarines and peaches, so the other day I busted out a cobbler for a friend I took dinner to (while I ooh'ed and ahh'ed at her new, precious little bebe). Smoothies are always wonderful with ripe fruit, but I . . .
