The 4th of July always comes upon us quickly. Summer has us so busy playing, working and soaking up the sun! If you are anything like me you’ve got a million things to do and not a million hours. So the question is.. what can you bring to the big holiday party? What can you make that will look like you have all the time in the world to bake amazing treats?! This, my friends, is this answer…red white and blue berry trifle.

Pound Cake for the trifle
To make this berry trifle I used our Pound Cake Recipe. Our pound cake recipe works perfectly because it is a rich, moist cake that can stand alone nicely but add a few toppings and it’s complete.
Stop thinking to yourself about running to the store for some fake cake… this cake is amazing and totally worth the time. I might be a little bit of a cake snob. I love cake. And the more I make home cakes from scratch the more convinced I am the boxed and store bought just don’t measure up. I will eat them all the same, but fresh homemade cake from scratch is where it is at…. UNLESS the cake is being purchased from a cake specialty store. But even then.. if I am going to pay that much for a cake it had better be amazing!

This Red White & Blue Berry Trifle is the perfect dessert for your summer holiday festivities. It's elegant, delicious and beautiful! plus, patriotic!
- 1/2 lb 2 sticks butter
- 3 cups sugar
- 1 cup sour cream
- 3 cups all-purpose flour
- 1/2 teaspoon baking soda
- 6 eggs
- 1 teaspoon vanilla
- Blueberries
- Strawberries
- Whipped Cream or Vanilla pudding
- Preheat oven to 325 degrees.
- Cream butter and sugar together; add sour cream.
- Sift flour and baking soda together.
- Add to creamed mixture.
- Alternately add eggs, one at a time, beating after each.
- Add vanilla.
- Pour into a greased and floured bundt pan and bake for 1 hour 20 minutes. (Check at about 1 hour and 10mins)
- Bake a few hours in advance to assembling, so the cake is thoroughly cool before layering.
- When ready to layer cut cake into about 1inch slices, then cube those slices.
- Place a layer of cake cubes down into your trifle bowl. Press them in so they are packed nice and tight.
- Add a heavy layer of whipped cream onto the cake, smoothing out to the edges. Then top with sliced strawberries and a layer of blue berries.
- Repeat these layers one more time.
- For the top layer, arrange strawberries and blue berries a little more decoratively.
Have some fun and use your creativity! Anything is going to look good with fresh berries! I even took some slices of strawberries and cut them into little stars for a more patriotic theme. Way cute. and dang good.
This is such a showstopper of a dessert, can’t wait to try it!
