    Parmesan Crusted Tilapia

    I did not grow up on the coast, instead- smack dab in the middle of the country. I did not grow up on crab legs and lobster fresh from the shore, just the occasional costco salmon. SO, with that being said, I'm not the biggest seafood eater. I tell you this,to convince you, because there are MANY of you who do not like fish, or many of you who may like it but do not want to prepare it. IF you fall in any of those categories- this meal is a great starter fish meal for you. Tilapia is very mild flakey fish. You will love this parmesan crusted tilapia!

    For extra special date nights my husband and I would treat ourselves to McGrath's Fish House in our college years. One of my very favorite meals was the parmesan crusted halibut. Flakey fish, salty crusty topping, but at $18 a plate we could not indulge our student wallets as much as we wanted. One night Nate set out to make a copy-cat recipe for me. I take no credit for this recipe- he did it all and he did it perfectly. Tender, white, flakey fish and a salty savory crispy crust. Perfect.

    How to make parmesan crusted tilapia

    Tilapia is also one of the most affordable fish! It's simple, and VERY fast. this whole meal can be done in about 15 minutes. really.

    1. prepare crust, and fish

    2. smooth on parmesan paste

    3. broil till crispy

    THAT EASY!

    The crust consists of a few seasoning, creamy ingredients and cheese! It will look more like a paste after you have mixed it all up.

    4. When you out the parmesan crust on the filets, put it down the center of the fish because as it melts it will drip down. For it to stay on the fish, don't spread it to the ends.

    Broil the fish on one side, flip- layer the crust on, broil again.

    These pans cook it beautiful and clean like a dream!! cleaning this off was easy peasy. I didn't foil or parchment paper. here are the links to these cute, colorful jelly roll pans.

    Our family isa also a big fan of Uncle Ben's Long Grain and Wild Rice for pairing with my fish sides. If you can find the the 5 minute recipe grab it can be tricky to find (I recently found it target!) but the original is delicious too!!

    Ingredients

    • ½ cup Parmesan cheese powder
    • ¼ cup fresh grated parmesan cheese
    • ¼ cup butter softened
    • 2 tablespoons mayonnaise
    • 2 tablespoons fresh lemon juice
    • ¼ teaspoon dried basil
    • ¼ teaspoon ground black pepper
    • ⅛ teaspoon onion powder
    • ¼ teaspoon garlic salt
    • 2 pounds tilapia fillets

    Instructions

    • Preheat your oven's broiler.
    • Line a pan with aluminum foil, spray with cooking spray.
    • In a small bowl, mix together the parmesan cheese powder, butter, mayonnaise and lemon juice, dried basil, pepper, onion powder and garlic salt.
    • Mix well and set aside.
    • Arrange fillets in a single layer on the prepared pan.
    • Broil a few inches from the heat for 2 minutes.
    • Remove the fillets from the oven, flip and cover them with the Parmesan cheese mixture on the top down the middle. Add fresh parmesan cheese. Broil until the topping is browned and crispy.
