    Lamb Gyro with Hummus Sauce

    Herb grilled, mega-tender, perfectly juicy Lamb bites with with a gorgeous creamy lemon hummus sauce this lamb gyro is going to be the best gyro of your life. I'm not exaggerating in the least! It's fast, easy and so fresh and healthy.

    What is a Gyro?

    Gyro is a Greek food dish made from lamb (sometimes chicken or a beef/lamb combo), marinated with herbs and spices. Lamb gyro meat is then threaded onto a vertical rotisserie-style cooker, then sliced directly off into smaller bite-sized pieces which are stuffed into a pita with a salad and wrapped.

    What You Will Need To Make Gyros Lamb

    1. 2-3lb of Boneless American lamb leg. Shoulder will also work.
    2. Herbs- these will season and give the lamb a delicious fresh flavor
    3. Garlic- always marinate meat with garlic
    4. Lemon- I love the flavor of lemon. You should always marinate red meat with an acid like vinegar or citrus. I prefer red wine vinegar or lemon. Lemon pairs perfectly with this dish. We are using both lemon juice and zest.

    How To Grill Your Lamb for Greek Gyros

    1. trim excess fat off your meat
    2. cut meat into two inch pieces, trying to keep them as equal as possible.

    Make Your Gyros Marinade

    1. In a large bowl add all ingredients for marinade.
    2. Stir together
    3. Toss with Lamb chunks
    4. allow to marinate for at least 30 minutes up to overnight.

    Skewer your lamb into kebabs

    Once lamb has marinated you will want to place it on a skewer. I have reusable metal skewers I Iove, but you can also use disposable wood skewers. Just be sure to pre-soak them in some water.

    Add about 5 pieces of lamb to each skewer. Do not crowd the lamb chunks. You want them to barely be touching so allow the meat to cook evenly.

    Grill Lamb Gyros

    Preheat grill or smoker on high heat. Grill lamb skewers for about 8 minutes each side. Lamb is done when they reach an internal temperature of 145 degrees and has rest for a minimum of 3 minutes.

    How to make your lemon hummus sauce

    In a small bowl add

    1. hummus- you can use store bought or homemade. We have a great easy recipe here.
    2. Add in oil, lemon and salt and pepper
    3. Stir to combine.
    4. Add more salt or pepper desired.
    Hummus, lemon juice, olive oil and seasoning added to a bowl and whisked together.

    You can serve your hummus sauce just out of the bowl or place it in a small dressing bottle for easy pouring.

    What are good toppings for a Gyro?

    There are so many options but here are some I like to use!

    • fresh cucumber
    • lettuce
    • tomatoes
    • sliced bell peppers
    • tzatziki sauce
    • sliced red onion
    • feta cheese

    How To Build Your Lamb Gyro

    Take soft pita bread, add on

    1. creamy tzatziki
    2. Hot lamb fresh off the grill
    3. lettuce
    4. tomatoes
    5. onions
    6. feta
    7. lemon hummus sauce

    For a gluten free option try the brand BFree pita bread. I really like it! I will follow directions and warm it up slightly before layering.

    What do I do with leftover lamb?

    Store leftover grilled lamb in an airtight container in the fridge for 5-7 days.

    How do I store leftover hummus dressing

    Dressing is best if stored in an airtight container in the fridge and can be kept there for 7-10 days.

    Ingredients

    • 2-3 lb 2-3 lb boneless American lamb leg (you can also use boneless shoulder) cut into 2 inch cubes

    Lamb Marinade

    • 2 tablespoon minced garlic about 2 cloves
    • 1 lemon juice and zested
    • 1 bunch Italian parsley chopped
    • 1 tbsp sea salt
    • 1 teaspoon red pepper flakes
    • 2 tablespoon dill chopped
    • ½ cup olive oil

    Lemon Hummus Sauce

    • ½ cup hummus
    • ¼ cup olive oil add more to desired consistency.
    • 1 lemon juice abut ¼ cup
    • 1 teaspoon dijon mustard
    • 2 teaspoon sea salt
    • freshly cracked pepper

    Instructions

    Lamb

    • Trim excess fat off lamb, chop into two inch cubes. set aside.
    • Chop all herbs finely. In large bowl combine herbs, oil, seasonings, lemon juice and lemon zest, add lamb chinks and marinate in an air tight container or ziplock bag. Let marinate for 30 min- a few hours, to overnight.
    • Place 5-6 cubes on a skewer and grill on high. about 8 minutes each side, 16 minutes total. Check internal temp of lamb to be at 145 when finished and remove from grill. Let rest minimum 3 minutes.

    Hummus sauce instructions

    • Combine all ingredients in bowl and whisk. Add more or less olive oil to desired consistency.

    Notes

    When adding lamb to skewer be sure to not pack too tightly or over crowed. You want the skewer to cook evenly and create a nice crisp grilled crust to each piece of lamb.
